From popcorn to raw carrots, TikTok's foodie community loves reinventing salads, and the latest recipe to take over FYP is no exception. The new Cucumber Pepper Salad that's going viral on TikTok swaps out all the classic leafy greens found in salads for cucumbers and peppers (obviously), creating a colorful, flavorful dish.
The recipe was originally brought to the platform by Rachael Kirkconnell, who you may recognize as a contestant on Matt James' season of The Bachelor . She shared a video on TikTok On March 3, she revealed that she makes the snack "probably every day," which only requires five ingredients: gherkins, mini bell peppers, ginger paste, Trader Joe's Everything But The Bagel seasoning and chili crisp oil or crispy chili peppers Onion topping.
If you thought the ingredient list was simple, just wait until you discover how easy meal prep is. To make the salad, Kirkconnell recommends chopping the cucumbers and peppers so they're not too big, then placing them in a bowl and pouring the ginger dressing over the plate. Then, add a "bunch" of all the seasonings except the bagel on top, and finish with a "big dollop" of oil.

Along with a gorgeous combination of red, yellow, orange and green vegetables, the end result is a dish that's "savory for the seasoning, sweet for the ginger" and "salty for the crunch of the chili."
Kirkconnell is so obsessed with the salad that she even admitted that she "literally drinks the juice from the bottom [of the bowl]" after eating it. "I'm craving a Caesar salad, but this is right there," she said in the original video.

The comments on Kirkconnell's video are not only full of good reviews, but also delicious modifications. User @flockosheilas said they have made this dish three times and shared that they have tried the recipe by adding avocado. At the same time, @oh.hey.alexxx uses shallots to enhance the creator’s “contribution to society.”
TikToker @gracie_norton also suggests adding rice and meat on top, along with lime juice and cilantro for a heartier meal. To turn a snack into a full meal, @janellerohner recommends adding chopped carrots, red cabbage, chicken breast, cooked pasta, miso sauce, and sriracha sauce.
