While we're still waiting for some of the returning cast members to be confirmed, here are the ones we know for sure who will be returning in the finale:

As of this writing, there are currently questions about George Cooper Sr.'s involvement in the cast of Young Sheldon, played by Lance Barber. The show's creators have confirmed that George's impending death will be resolved at some point in Season 7 — we just don't know how or when. One popular fan theory suggests that the event will end the series, meaning we'll likely see George in the finale.
In addition, supporting characters including Paige, Billy Sparks and Tam have all been confirmed to return in the hour-long special.
Adult Sheldon (played by Jim Parsons) and Amy Cooper (played by Mayim Bialik) are also confirmed to appear in the episode.
'Young Sheldon' Season 7 Finale: What Happens?
As of now, specific details about the Young Sheldon season 7 finale are still unknown, but key plot points such as George's death, Sheldon's journey to Caltech, and Georgie and Mandy's relationship are all is a storyline that needs to be resolved first

Some or all of these narrative threads may appear in the finale. However, there's a special emphasis on Sheldon's brother and his relationship with Mandy, as they now have an officially greenlit spinoff series from CBS.

How adult Sheldon and Amy Cooper will fit into the finale - with some fans saying the entire prequel is a figment of Sheldon's imagination. If that's the case, we'll likely see the pair appear in the final scene. Some fans also believe the couple's children may appear in the final scene.
Fans are also eager to see Missy complete her so-called redemption arc, which may have something to do with The Big Bang Theory thanks to her new boyfriend Tyler.
